I wanted to make a cake shaped as ice bucket with champagne bottle in it for sooo long! But there was never right occasion. So here was my chance. In the beginning things weren’t going too smooth. “Ice bucket” was pretty tall and I didn’t want to put cake board in the middle, so layers started sliding one against another. Finally I was able to stabilize it and it settled nicely in the fridge. The champagne bottle was “third time is a charm” case. First bottle I broke myself because it was too thin, with second I had help from my husband who smashed it for me, and third one I managed to extract from the mold and install on the cake just an hour before delivering. The rest of the cake was easy and I was happy with the result.

Easter cake was a challenge for me because I had to decorate it with buttercream. I like buttercream INSIDE the cake, I even enjoy smooth buttercream icing all over the cake. But when I have to pipe decorations with it, my hands just melt it. So it was a bit of a  juggling act: start with one color, pipe until it gets a little too easy, put it aside, quickly wash hands in icy cold water, grab another bag with different color and go on.  So this was the result: vanilla cake filled with vanilla buttercream and raspberry jam and iced with buttercream with some royal icing flowers.

I came across this cake idea on the web and really liked it. The cake turned out a lot of fun to make.  There was also a surprise part – Rafaello treat inside each of the rolls. “Salmon” is rice crispy treat wrapped in fondant.
