Some kids like crocodiles, so the challenge was to make a birthday cake that features these not-so-beautiful creatures and still looks attractive to party guests that are not into crocodiles.¬† Inside it is a chocolate cake with Vanilla Italian Meringue buttercream. Outside it’s covered in chocolate fondant and a little puddle in the middle is actually blue-green¬† jello jiggler that would reveal it’s colors better if it was sitting on a lighter background. Crocs are molded chocolates.

These Chocolate Lego Cupcakes were a very exciting project, especially custom-made Lego pieces molded from colorful candy melts. There is a picture of Lego pieces below as well. Cupcakes were Double Chocolate Cake recipe, filled with Belgian Chocolate Ganache and iced with vanilla cream cheese buttercream. Very rich, very moist, very much enjoyed by both kids and grown-ups.

Great mold made a great cake! Finally got a chance to use this beautiful Christmas wreath mold. Cake itself is chocolate cake recipe based on Peggy Porschen’s book but with 20% less sugar and added French Fancy Chocolate Truffles for baked-in surprise. It looked quite elegant just dusted with powdered sugar, but to add some festive colors I decided to paint main elements with melted candies (red, green, yellow). It was different, colorful and I avoided using icing, which as turned out kids enjoyed better.
