This cake was supposed to have a fondant collar around, and I had a really nice lace mold to shape it, however 1-2 hours before¬† it was supposed to be ready, I had a little test done and found out that pastry cream and fondant don’t mix. Cake was filled with light pastry cream (original pastry cream recipe + half the volume of whipped cream) and fresh berries, and moisture in the cream melted fondant within an hour! After panic attack passed I did a quick substitute for Concerto cookies.

Delicious Strawberry Mille-feuille cake with light creme patisserie (traditional pastry cream folded with whipped cream) and fresh sliced strawberries. Top of the cake is iced with piped whipped cream and decorated with edible photo.  Much appreciated alternative to a traditional sponge cake / buttercream birthday treat.
